why does cartilage never stops growing?

Technically it has to stop growing at some point, if nothing else it just grows in minute amounts every so often once someone is fully grown. This is because as bones and the structure of a person grow and take shape, the cartilage has to grow to accomodate the growth of the person, especially in areas that are all cartilage, such as ears and noses.
